Spicy Peanut Butter Cookies

I love Dark Chocolate Dreams peanut butter from The Peanut Butter & Co.  It doesn't need to be on anything.  I can just eat it straight out of the jar.  While perusing their website I noticed they had a spicy peanut butter as well.  I have never seen it in any of the local grocery stores so my husband ordered a case of 6 from Amazon.  When it arrived we tried some straight out of the jar and didn't care for it; though it didn't have a bad flavor.  The consistency seemed weird.  The label says its good for cooking so we decided to make peanut butter cookies with it.  The cookies are really yummy.  If you like spicy foods and peanut butter you will like these.

Spicy Peanut Butter Cookies

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup spicy peanut butter ( I used "The Heat is On" from The Peanut Butter & Co)
1/2 cup butter, softened
1 egg
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Preheat the oven to 375F

Mix sugars, peanut butter, butter and egg in a bowl.  Stir in the remaining ingredients.  Cover and refrigerate for at least 2 hours or until firm.

Place parchment paper on cookie sheet for easy cleanup.  Shape dough into 1 inch balls and place about 3 inches apart on the parchment paper.

Bake for 9 to 10 minutes.  Cool for 5 minutes then remove from cookie sheet and cool on wire rack.

Yields ~ 20 (I completely forgot to keep track)
